Building a pantry that remembers

The twelve ingredients that make ancestral cooking possible on a weeknight — and where to source them well.

A remembering pantry is short, not long. Twelve ingredients, bought well, will carry a season of cooking: heirloom beans, dried corn, red palm oil, smoked paprika, hibiscus, sorghum, sesame, dried chiles, sea salt, garlic, ginger, and good vinegar.

Buy from growers who name their seed. Heirloom varieties cost more per pound and less per meal, because their flavor means you need fewer additions.

Store dry goods in glass where you can see them. A pantry you can read is a pantry you will cook from.
